Hail the sprout squeak with Quorn bacon-style pieces

Brussel sprouts photo by tibchrisWell, I don’t know about you but I’d say the festive rush is truly upon us … as everything gets more hectic, the pressure builds up on our time and our purse strings!

To help ease the pressure, we’ve been very busy in the Quorn kitchen where we’ve been creating those all important winter-warming Quorn recipes to get you through the cold snap.  Whether you’re looking for that special winter recipe or a menu for Christmas day – read on for some delicious and healthy recipe inspiration.

Firstly, a word on winter veg and two great reasons to go for the seasonal choice - they’ve got so much more taste and they’re less expensive!  Just take a look at all of these fantastic seasonal veg in our shops; celeriac, parsnips, carrots, beetroot, Brussel sprouts, red cabbage, Jerusalem artichokes, turnip, swede and squash.  For more on seasonal fruit and veg, check out the EatTheSeasons website and sign up for the weekly email newsletter.

Sprouts are plentiful this season and pack a powerful nutritional punch – they’re rich in vitamins A and C, iron, potassium and fibre.  Go sprouts go!

In celebration of the humble sprout, we’ve developed this recipe using our Quorn Style Bacon Pieces, available in handy 100g chilled packs or 250g frozen packs to dip into.

SPROUT SQUEAK

This makes a great supper dish after a big Christmas festivity lunch, or can be served as an accompaniment in a vegetarian Christmas meal

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves 2 as a supper dish or 4 as a vegetable accompaniment

Ingredients

  • 1 x 100g Quorn chilled bacon style pieces/100g frozen Quorn bacon style pieces from a 250g pack
  • 1 tbsp vegetable oil
  • 250g leeks, washed and cut into thin rings on the diagonal
  • 2 shallots
  • 1 tsp Italian seasoning
  • 250g sprouts, halved
  • salt and freshly ground black pepper

Method

1.Heat a saucepan of salted water, when boiling add the sprouts and cook until soft but firm, roughly 8 minutes. Drain and put to one side.

2.Heat the oil in a shallow frying pan and toss in the leeks and shallots, cook gently until softened and then toss in the Quorn bacon style pieces and the Italian seasoning.

3.Continue to cook gently together for 5 minutes and then add the cooked sprouts and continue to heat gently until all ingredients are hot.
