Thinking of picnics

PicnicsDoesn’t this lovely warm weather make you think of picnics?

I cannot think of a nicer way to eat out ‘al fresco’ than having a picnic. In these troubling financial times it is a cheap and easy way to meet up with friends and eat together.

Gone are the days of the warm ham sandwiches and flasks of stewed tea of my childhood. These days picnics can be so much more creative and inventive and with cool bags or boxes the food is easy to keep cool and fresh.   

Some of my favourite picnic places are National Trust or English Heritage  properties where you feel as if you are in the middle of the countryside.  The National Parks website is also worth a read to find some great parks. 

Here are a couple of ideas for your next picnic:

  • Humus with celery and carrot sticks
  • Coronation Quorn (made like Coronation chicken) - lightly stir fry the Quorn pieces and when they are cool mix into low fat mayo and curry powder to taste, with maybe a drop of lemon juice if liked.  Serve with shredded lettuce in any bread of your choice, wraps or pitta bread pockets with a few cherry tomatoes.  It is just delicious.

To finish why not try home made cup cakes, or even better, some large cool strawberries, which are just coming into the shops, with some whipped cream.
