Meat-free Sunday roast? No problem

I love a Quorn fillet on a Sunday. The rest of the family can eat their roast and I have my fillet. With  careful thought, vegetarians don’t have to be that different in their diet to other members of the family and certainly if a child becomes veggie then it is important that they fit in and eat similar foods to the rest of the family. Using a variety of Quorn products allows you to do this.

I must say here though, that the Quorn fillet bag recommends two fillets per portion and as a woman I find one quite sufficient. These fillets give me protein without much fat just the way a chicken breast would. I cook two fillets in foil in the oven with a couple of tablespoons of water, some herbs and garlic and a few drops of soy sauce which give them a lovely colour and flavour.

I eat one with the family with stuffing and the rest of the roast dinner using a veggie gravy powder on Sunday and keep the other covered in the fridge for use in a day or two. My favourite way of using the second fillet is sliced up and put in a wrap with lots of shredded lettuce and low fat mayo garnished with a couple of slices of tomato.  A filling tasty and nutritious lunch if ever there was one.
