Hearty and healthy meals? Yes you can!

Quorn Shepherds Pie

Are you trying to lose weight, fed up with wanting a bit more after your ‘diet’ meal?  Do you feel the need for a really filling, tasty ‘get stuck in’ sort of meal without ruining all your good efforts so far?  I knew that feeling too, but now I know that I can eat a fantastically filling and tasty meal that is also healthy and low in calories.  Quorn was my clincher when it came to sticking to a diet that lost me 3 ½ stone. 

Quorn mince makes a fantastic shepherds pie – chopped onion, celery, maybe carrots, mushrooms or peppers (NOT fried), all simmered together with Quorn mince and tinned chopped tomatoes, a pinch of chilli flakes and a splash of Worcestershire Sauce.  Simmer this for 20 – 30 minutes and then top with potatoes – just mashed with a little skimmed milk, plenty of pepper – even better is a mixture of potato and parsnip, or add a little mustard or chilli to the mash.  Top with a smattering of grated low fat cheese and cook in a hot oven until crispy on top. 

This is delicious and with any added boiled or steamed veg you fancy you have a satisfying plateful instead of the ubiquitous plate of salad!   And as time is always short these days, it is easy to cook double quantities of the Quorn mixture and use it another day with pasta – it makes a great sauce for one of the quickest meals when you don’t have time to cook.

    I don’t see why anyone would want to eat meat again after eating Quorn. So delicious - yet healthy too. (Yes I am quite passionate about Quorn)…

    I have made almost exactly the same receipe as “Quorn at Meadowgreen” with very good results. We have had your Cornish Pasties and find them very tasty, but today I cooked two and unfortunately only one had filling in it, the other one had only about one teaspoonful, I felt a bit cheated! Just thought I would let you know.
